The house

French wine salesman Arnaud Cazenave opened the restaurant in 1918 and styled himself a count. His daughter Germaine Cazenave Wells became a Mardi Gras queen many times over and kept her gowns in the house. Staff and guests still report a woman in carnival dress on the second floor, long after Germaine’s death, moving through the rooms that now hold her costumes. The dining rooms downstairs are white linen and soufflé potatoes, not a haunted-house set. That contrast is the pleasure: one of the city’s serious Creole kitchens, with a second floor that has not agreed the party is over.

Shrimp Arnaud, soufflé potatoes, café brûlot if you are celebrating. Ask to see the Mardi Gras museum after dinner. Walk it slowly. She may already be dressed.
